Five ways to cut ticket times on a busy night

Most kitchen delays start before the food is cooked. Here is how to remove the paper step between order and pass.

On a full Saturday the slowest part of a ticket is often the walk between the table and the kitchen. Every handwritten order is re-read, re-typed or shouted, and each step adds a minute.

Send orders straight to the screen

When the POS and the QR menu feed the kitchen display directly, the kitchen starts cooking while the waiter is still at the table.

Split ASAP from scheduled

Colour ASAP tickets differently from scheduled ones so the line always knows what to fire first. A +20 minute order should never jump the queue.

Tell the floor when it is ready

A push to the waiter when food is marked ready saves the kitchen from calling out, and plates reach the table hot.
